Step 2: Crack Salted Duck Egg into a bowl. Remove the Yolk and dice to small cubes.
Step 3: Heat up the steamer and prepare to steam the eggs.
Step 4: Crack 2 Chicken Eggs into the Duck Egg white mixture and add in diced Century egg and diced Salted Duck Egg Yolk. Add 100 ml-150 ml water and beat the egg mixture until smooth. Try avoid bubble.
Step 5: Pour all the mixture into a heat resistant dish. Would suggest a flat dish to enable the eggs to cook evenly.
Step 6: When the water is boiling hot, turn down the heat to low and insert the egg dish into the steamer and steam for 15-20 mins.
Step 7: Dice Spring Onions and scatter onto the egg dish, Steam another 1-2 mins.
Step 8: Remove the dish and add some Aged Soy Sauce for taste and will be ready to be served.
* Avoid high heat when steaming the egg to have a smooth texture. * Feel free to add any additional condiments or shallot oil as you preferred. * No additional salt is required as salted duck egg is salty enough.
